ITALIAN MEAT PATTIES
This recipe for meat patties is similar to the one for meatballs, but there are important differences that apply to each. I can't stop eating these things once I start.
* 1 of Ground Chuck
* 1 Large Clove of Garlic
* 1/3 Yellow Onion
* 1/2 Green Bell Pepper (& Red Bell Pepper-optional)
* 1 egg
* 1 Tablespoons of Salt
* Black Pepper
* 1/2 Cup of Grated Romano
* 1/3 Cup of Bread Crumbs
* Olive Oil
* 1/2 Cup of Water
Place all the ground meat into a large mixing bowl.
Mince the onion and garlic. Fry, in olive oil, the onion first, then the garlic until they are half cooked. Let it cool a while before mixing into the meat. Frankly, you can get away with mixing them into the meat raw, it's up to you, but I like them well cooked.
Mince the green pepper, and add to the meat.
Mix the meat as you add the ingredients.
Scramble the egg separately.
Add the grated Romano cheese to the scrambled eggs then mix it into the meat along with the bread crumbs.
Add 1 tablespoon of salt and a some black pepper ...in fact, keep adding the pepper as you continue to mix the meat.
Add the water.
Keep mixing with your hands until you feel confidant that you have done a thorough job.
Roll into patties about the size of a somewhat large hamburger. Do not pat tightly.
Once you have them formed, you will have to fry them in olive oil...medium-high heat until well done. Don't worry about making them too dry because they have egg, so they will stay soft on the inside.
I must warn you that these aren't nearly as good when they are warmed as leftovers. Eat as many as you can when they are first cooked.
