Roasted Sea Bass with Sauce and Green Beans
(entree with vegetable)

The best dishes I've ever had in restaurants have been lamb chops or sea bass. Upon first glance, this sauce may look to be overpowering for such a delicate fish, but believe me, it will be one of the best meals you've ever had in your life. Sea Bass is about 3 times more expensive than other fish, but when you make it right, you'll feel like you are taking full advantage of being alive.

 

INGREDIENTS

* Extra Virgin Olive Oil
* 1 Large Onion
* 2 Cloves of Garlic (minced)
* Salt & Pepper

* 2 lbs. Italian Plum Tomatoes
* 1 1/2 Teaspoons of Curry Powder (mild)
* 2 Teaspoons of Minced Peeled Ginger
   (bottled ginger would probably be best)
* 1/2 lb. Green Beans
* 4 Fillets of Sea Bass
   (approximately 6 to 8 oz. fillets)

Preheat oven to 400 degrees.
Coat bottom of large baking dish with a liberal amount of olive oil.
Cut the onion in half long-ways (through the root end), then cut each half into fairly thin wedges.
Place garlic and onion in the pan, cover with salt and pepper and bake for about a 1/2 hour stirring occasionally.
While that is baking, you can prepare the second half of the ingredients:
Peel the tomatoes and cut the stems out, then cut them into quarters.
Clean the beans and cut the stems off, then cut them diagonally into 2 inch pieces.
Remove the garlic and onions, then increase the heat to 450 degrees.
Mix the rest of the ingredients into the baking dish.
Place the fish on top of the mix, salt and pepper liberally, then spoon some sauce on top of the fillets before placing it in the oven.
Roast about 20 to 25 minutes, depending on the thickness of your fillets. You must keep spooning the sauce on top from time to time while the fish is baking.
