Truthfully, this dish will not knock you over, and make you want to have it again and again, like most of my other dishes. It is, however, a nice change from eating potato salad with all the gunky mayonnaise, and besides that, it's very colorful, and good looking.



* 2 Large Potatoes (or as many as you wish)
* 1/4 Red Onion
* Chopped Parsley (a generous amount)
* 1/2 Red Bell Pepper
* Green Beans
* Salt
* Black Pepper
* Red Wine Vinegar
* Olive Oil


Boil the potatoes and cook the green beans, or open the can of green beans if that's the way you want to do it.

Mince the onion, bell pepper and chop the parsley

Mince the green pepper, and add to the meat.

Dice the potatoes and mix these other ingredients.

Salt and pepper to taste.

Add the olive oil and wine vinegar, just as you would when you add them to a salad.

Place in refrigerator. Serve chilled.
