ITALIAN CABBAGE WITH BEEF

This is really good and much easier to make than most of my other recipes. Many people complain that cabbage is hard to digest, but the truth is that the longer you cook it the more gaseous it becomes. Be careful how long you keep it in the frying pan when you make this one. Keep it just a tad crisp.

INGREDIENTS

* Extra Virgin Olive Oil
* 1/2 Head of Cabbage
* 1/2 lb. Ground Beef
* 1 Cup of Wild or Aborio Rice
* Mushrooms
* Red Sauce
* Salt & Pepper
* Red Pepper Flakes


Shred the cabbage, slice the mushrooms and make some sauce separately.

Fry the ground beef in olive oil. Use a large skillet to do this because once the beef is brown you will then add the cabbage. Don't overcook the cabbage and it shouldn't cause indigestion. Throw some sauce in with this mixture so that everything has now become red. Salt, pepper and red pepper flakes to taste.

I always sauté mushrooms separately so they don't overcook.

Cook the rice separately and after it has absorbed all the water you've boiled it in and it is done, add some sauce to this as well.

Now just put a layer of rice on the bottom of a plate and cover it with the cabbage and beef mixture. Ladle a bit more sauce if it's too dry for you.
