BROCCOLI WITH GARLIC & OIL
Italian food is usually simple. The reason why no one usually makes it as well as Italians is because we have a knack for getting the mixtures right...those flavors are born into us. This is so easy to make and yet so easy to make a mistake with. Just do what I tell you and you'll be able to enjoy the beauty of simple Italian cooking.
* 1 Bunch of Broccoli
* Olive oil
* 2 Cloves of garlic
* Salt * Romano cheese
Cover the bottom of a large skillet liberally with olive oil.
Slice the garlic and fry in the oil. The oil shouldn't be real hot because the garlic will burn and get bitter.
Add about 3/4 inch of water into the pan so that you can cook the broccoli in it. As the water is heating, cut the head of broccoli into wedges. Drop in the water and cook until done. In fact, cook until it's more than done because I have a feeling you're going to pull it out of the pan while it's still real green and hard. It's got to be just a tad soft for this to taste right, and don't be afraid to use salt...it's not the same if you wait until after the food is cooked to use salt
Sprinkle with Romano cheese.
